How To Make Tasty Cupcake Icing

Vanilla Cupcakes

What’s the point in having a great cupcake if you haven’t topped it with great icing?  Tasty icing is the perfect topping for a beautifully textured cake.  The great thing about icing is that you have loads of creative licence, too.  This means you can create icing that fits in with the flavour of the cake itself or create something with a sharp contrast.  Why not play around and experiment and see what you can come up with?  

Buying ready-made icing in the tube is cheating!  It always tastes better when you’ve made it from scratch yourself, anyway.

Here is a basic icing recipe that is easy to add flavour to so you can easily enjoy your own creations.

What You Need

To make the perfect icing for your cupcake, you need the following:

  • 125g of soft unsalted butter.  Make sure you use actual butter, and not margarine or spread!
  • 200g of icing sugar, put through the sieve to ensure it’s as fine as possible.
  • 1tbsp of milk.
  • 1tsp of vanilla extract, or another flavouring or extract you wish to include in your recipe.

Making the Icing

With ingredients at the ready it is time to get started putting your recipe together.  Here’s how to do it.

First, put the butter into a bowl and beat until light and fluffy.  Using an electronic mixer makes this easier and takes away the effort you’ll be putting into it when using a spoon and your own muscle power, although doing it manually can feel a lot more rewarding when you finally get to enjoy your cakes!

Your electric mixer will come into its own for the second stage, however, which is mixing in the icing sugar.  Start slowly so you can ensure all of the sugar is mixed in with the butter, and mix vigorously once the mixture is one.  Next, add the milk and vanilla extract (or alternate flavouring) and continue to beat.  If you feel that the mixture is too stiff and thick, feel free to add more milk.  If you want a stronger flavour, feel free to add more extract or flavouring, too.  Beware of things like vanilla, however, that can quickly become overpowering if you add even a little too much!  Continue mixing until you have flavoured it as you want, you are happy with the consistency and it is light and creamy in texture.

Now, add colourings if you’re using them, and if you want a chocolate or zesty icing, for example, the final ingredients should be added at this stage.  Then, you’re all ready to go with tasty icing for your cupcakes!
